Fresh Australian finger lime, muddled with agave nectar, Kensington mango puree, golden Jose Cuervo tequila, triple Sec and Aperol. That’s what the folk at The Rawson like to call a ‘Bowen’s Margarita’, shaken on ice and strained to a margarita glass, with a rim of wasabi powder and salt for just the right kick.
