With crocodile sourced from far North Queensland, this is an adventure on a plate. Woodfire grilled tail fillet with ginger and shallot yoghurt, served with chilli bean sauce and a side of crocodilian crispy kale.

If that doesn’t get your mouth watering, Pony Dining has succulent seared kangaroo loin on the menu as well. It’s served with roasted beetroot tartare, the tang of raspberries and fresh horseradish.

To top it off, a cocktail made from one of Australia’s most popular native herbs. The Lemon Myrtle Spritzer features a homemade liqueur lovingly combined with sparkling Australian Wine.
