Sahtein brings authentic Beirut‑style Lebanese dining to The Rocks this February.

Led by Executive Chef Mike Flood and Head Chef Rifat Katranci, the new restaurant showcases everyday Lebanese dishes cooked over wood fire and charcoal, offering mezze, grilled meats, seafood and slow‑cooked specialties in a warm and welcoming setting.

Opening 12 February 2026, Sahtein brings the flavours and warmth of Beirut‑style Lebanese dining to The Rocks. Taking over the former Dining Room space at The Collective, the restaurant focuses on the dishes found in homes and neighbourhood eateries across Beirut, prepared with simplicity, familiarity and charcoal‑driven flavour.

The kitchen is led by Executive Chef Mike Flood (Firedoor, Quay, Felix Bistro & Bar, Petrus, Maze) alongside Head Chef Rifat Katranci (Jimmy’s Falafel, The Cut Bar & Grill), with menu direction from Hunter St. Hospitality Culinary Director Santiago Aristizabal. Their approach is rooted in wood‑fire cooking, halal produce and traditional Lebanese technique.

Expect a generous spread of cold and hot mezze, grilled meats and seafood served as they’re ready. Signature dishes include Kibbeh Nayeh, Balila with lemon brown butter, Laham Mashawi, and larger plates such as Raqabat Kharouf, a slow‑cooked seven‑spice lamb neck with stuffed zucchini and vermicelli rice.

Sahtein is designed to feel welcoming, focused and easy to return to - bringing a new Lebanese dining experience to the heart of The Rocks.
